I've looked through the proposed sessions at DrupalCon London 2011 and extracted some (including 2 of mine) that could be particularly relevant to people interested (in one way or another) in Drupal and education. Please give your votes to those you might be interested in.
Education in Drupal
These are sessions that deal with Drupal curriculum, training, etc. Arguably, all DrupalCon sessions are in some ways teaching their participants about Drupal. The ones I chose below are in some way explicit about it or try to teach people about who do not yet know what they need to know.

Drupal in Education
These are sessions that deal with the use of Drupal in any educational settings. They really don’t have much in common with those dealing with Education in Drupal but perhaps there should be more of an overlap. Perhaps the Drupal community should not just give something to the education sector but also learn something from it (both positives and negatives).
